This amazingly simple soup is nutritious and you can make it even more so by adding more vegetables. The base of the flavor is in the two key ingredients – galangal and lemon grass. Based on coconut milk, it can be a full meal in itself – just add noodles or serve on a bed of noodles.Making this is quite simple – simply simmer chopped vegetables, thinly sliced galangal and bruised lemon grass with seasoning in coconut milk. You’ll need to simmer it for a while to get the flavors of the galangal and lemon grass to permeate into the soup – when its done – divine!Note: For the non-vegetarian version, just add some shredded boiled chicken to it, or raw, finely sliced chicken. |
