Summer Minestrone with Rice

A lighter twist on this classic winter soup makes it an ideal healthy meal for one in the summer time

* Serves: 1 * Preparation: 10 minutes * Setting Time: 10 minutes *

Ingredients

  • 1 garlic clove, chopped
  • 75 gm spring onions, chopped
  • 75 gm carrots, cubed
  • 75 gm celery, chopped
  • 75 gm green beans, chopped
  • 50 gm fennel, chopped
  • 75 gm green asparagus, chopped
  • 75 gm cherry tomatoes, quartered
  • 50 gm canned sweet corn, drained
  • 50 gm rice
  • 600 ml vegetable stock
  • 1 bay leaf
  • 6 stalks thyme
  • Pepper and salt, to taste

Method

  • Place all ingredients into the soup maker, close the lid and select the ‘chunky’soup program..
  • When the soup is ready, open the lid and pour into bowls. Remember to remove the bay leaf before serving
  • Serve hot with a side of crusty bread.
