Today was just me for dinner, so it had to be something simple. I had found a nice skate (or ray) wing and decided to cook that. The wing was placed on a piece of aluminium foil that was sprinkled with lemon juice, salt and ground black pepper, then popped into a pre-heated oven at 180 for 10 minutes.The peas and beans were shelled. The beans cooked in unsalted, boiling water (salt makes them hard), then drained, flavored with a little butter, salt and pepper.

Finally, I sprinkled fresh, chopped mint from the garden and dusted the whole lot with a little more salt and pepper and a sprinkle of more lemon juice. Delish!

I was thinking of a potato too, but I wouldn’t have been able to finish it all! Washed everything down with some Cotes de Ventoux.
