|If its one thing Zainab doesn’t like saving time on, it’s her sauces. This sauce was simmered for 3 hours before it was pronounced fit for human consumption.This sauce used Vine tomatoes as the base, which impart a nicer flavor than the usual variety. Also include was plenty of garlic, some carrots, celery and a bit of chopped onion.
Towards the end, check the seasoning and add some salt and pepper as required. Finally, when its done, finely chop the coriander and stir into the sauce. Add a dash of extra virgin olive oil in the end for a little more flavor.
Mix with cooked penne and serve. Some crusty garlic bread goes nicely with it.
