Mushroom and Spring Onion Rice

Here’s a quick recipe for a light lunch or dinner – rice with mushrooms and spring onions. Easily made and quite nice to eat on it’s own, you could go heavy on the flavors for dinner and perhaps think of adding some raw vegetables and fruits, and keeping flavors light, as a salad-ish light lunch.
