Nasi Goreng Kampung

Nasi Goreng is one of the most popular dishes in Indonesia and is widely regarded as the national dish by many. An easy to do dish, there can be many variations, adding or removing meats and veggies suiting your tastes. Vinita Bhatia shares her take on the dish, accompanying which is another Indonesian classic, Chicken Satay.

Ingredients:

Rice

  • 250 g steamed Jasmine rice
  • 30 g Laksa Paste (sub recipe below)
  • 1 bunch spring onion, sliced
  • 1 medium sized egg, beaten
  • 50 g dried shrimp, cooked
  • 1 chicken Satay (sub-recipe given below)
  • 10g shallot, fried
  • 20g vegetable oil
  • 1 egg, fried sunny side up
  • 1 sprig coriander leaves, chopped
  • 50 g prawn crackers
  • Salt, as per taste

Chicken Satay

  • 3 chicken thigh pieces, about 15 g each
  • 10g ginger, finely chopped
  • Salt, as per taste
  • 100 ml oil
  • 1 6-inch long bamboo skewer

Laksa Paste

  • 5 dried red chillies
  • 10 g coriander powder
  • 5 g cumin powder
  • Pinch of turmeric powder
  • 30 g onion chopped
  • 30 g lemon grass, chopped
  • 25 g Galangal, chopped
  • 10 g cashewnuts
  • 10 g garlic, chopped
  • 10 g shrimp paste
  • 15 ml peanut oil

Method:

Chicken Satay

  1. Mix all ingredients well. Cover and refrigerate for 24 hours.
  2. Skewer the chicken pieces and grilled for 3 minutes.

Laksa Paste

  1. Boil dried red chillies and let it stand until softened, drain.
  2. Place all powdered spices (turmeric, coriander, and cumin) in a pan and toast for a few minutes, till fragrant.
  3. Blend chillies, lemon grass, nuts, galangal, garlic, shrimp paste and toasted spices in a mixer, add oil and blend to form a smooth paste.
  4. Refrigerate till required.

Rice

  1. Heat oil. Add beaten egg, garlic and Laksa Paste, sauté for a minute, then add rice.
  2. Add fried dried shrimp and sliced spring onion.
  3. Transfer this mix onto a deep bowl or serving plate.
  4. Garnish with spring onions, fried shallot and coriander leaves. Place the fried egg on stop, and serve with chicken satay and prawn crackers.
