Colocasia (arbi) and Tomatoes

This is a daily menu recipe that only uses colocasia, onions and tomatoes along with common condiments and is delicious served with hot rotis. You could try stuffing roti rolls with this, for tiffin boxes too.

1. Peel and cut the colocasia into strips
2. Cut your tomatoes into strips
3. Chop some onions
4. Heat a little oil
5. Add cumin seeds (jeera), followed by the onions
6. Add some chilli powder, turmeric powder and salt
7. Add the colocasia and stir fry for a few minutes
8. Add the tomatoes
9. Bring the heat down to a simmer and cook covered until done.

Serve with hot rotis.
