Noodle Soup with Fish

Chilli Noodle Soup with Fish and Mushrooms
  • 350 gm Fish Fillet
  • 300 gm Button Mushrooms
  • 50 gm Thai Red Curry Paste [or to taste]
  • Handful of egg noodles
  • One potato, peeled and finely chopped
  • Coriander
  • Fish Sauce
  • 1 Egg
  • Fresh coriander
  • 1 Lemon
  • Dry red chillies

Needed to make a quick dinner and found the following in the Kitchen:
and thought perhaps soup might be a good choice for dinner. So:

  1. Separate the stalks from the mushrooms. Wash and set aside heads. Finely chop the stalks
  2. Wash the fish. Cut into 1 inch cubes. Keep 2 cubes aside and chop into a fine mash.
  3. Heat some oil, add the red curry paste. Mix.
  4. Add the mushroom stalks and the mashed fish
  5. Stir fry for a couple of minutes.
  6. Add the mushrooms.
  7. Add 3 glasses of water. Bring to a boil
  8. Add the potato
  9. Add the fish
  10. Boil for 5 minutes.
  11. Add the noodles, dry red chillies and fish sauce.
  12. Boil for a further 5 – 7 minutes.
  13. Beat the egg well, put into a fine sieve and sprinkle over the soup. Stir for 1 minute.
  14. Take off the heat and mix in finely chopped fresh coriander.
  15. Stir in the juice from one lemon [lime] and serve hot.
