  1. Take the warm milk in a bowl and add sugar and yeast.
  2. Mix well. Let it sit aside for 5 to 10 minutes inorder to allow it to froth Meanwhile, take flour in a big vessel and add salt and olive oil. Mix well with your fingers until everything is combined.
  3. When the yeast, milk and sugar mix froths, add it to the flour and knead in to a smooth dough, adding enough warm water. The dough should be really soft and elastic.
  4. Knead for 10 to 15 minutes to form a good gluten. Transfer it to a greased bowl and cover it with a damp cloth. Let it sit in a warm, dark place for about an hour or so, until it becomes double in volume. I kept it inside the oven, which is turned off.
  5. After 1 or 1.5 hours, the dough would have fermented and would have become double its original volume. Punch out the air pockets and knead one more time.
  6. Divide the dough into 2 equal portions. Roll it using your rolling pin dusting as much flour to prevent it from sticking on the bottom.
  7. Transfer this rolled dough to a pizza stone and just press it on the edges, so that the edges remain thick compared to the centre. Repeat the same for the other one. Keep aside until the pizza sauce is done.
Pizza Sauce
  1. Heat olive oil in a pan and add garlic. Saute till it becomes golden brown.
  2. Add onions and capsicum and cook till they are soft. Add salt and sugar.
  3. Add the tomato and tomato puree. Add some water. Cover the lid and allow it to cook for 20 minutes in a slow flame.
  4. After 20 minutes the oil would have started floating on the top. Add pepper, Thyme, Oregano and Basil. Mix well.
  5. Let it cook for a couple of minutes. Check for seasoning and add accordingly. Turn off the heat. The marinara sauce is now ready.
  6. Spread enough marinara sauce on the rolled pizza dough. Add toppings as per preference.
  7. Sprinkle some grated cheese.
  8. Sprinkle some salt and crushed pepper.
  9. Bake in the preheated oven of 180 degrees C for about 20 to 25 minutes, until the cheese melts and the base becomes crisp.
