Instructions
  1. In a small bowl, add some hot water and add the saffron strands. Keep aside.
  2. Heat 3 tsp of ghee in a pan. Fry cashewnuts and almonds till golden. Then add raisins and fry for few seconds. Remove it and set aside.
  3. In the same pan, add sooji and roast for about 5 mins or so till it is light golden and the raw smell goes away from it.
  4. On a low flame, pour the boiling water, cardamom powder and the saffron water over the sooji and immediately mix well so that no lumps are formed. Keep mixing till it begins to thicken.
  5. Add the sugar and mix well stirring it continuously till the mixture thickens.
  6. Add the ghee and mix well till the kesari leaves the sides of the pan. Add in the roasted nuts and mix well.
  7. Serve warm or hot as it is in a bowl. I have used muffins cup to give it a shape.
