Instructions
  1. Dissolve the yeast and sugar in 1/4th cup of warm water. Rest it in warm place for 10-15 minutes.
  2. In a bowl combine flour, cinnamon powder, and pinch of salt.
  3. Add ghee and water (as required) and make a smooth batter. Let it sit for ½ an hour, let it to ferment.
  4. Boil water and sugar in a pan. Add cardamom powder and make one string consistency sugar syrup.
  5. Add lemon juice and switch off the flame.
  6. Wash and peel apples. Now cut the apple into thin slices.
  7. Heat oil in a wide pan. Check the oil, it should not be smoking hot.
  8. Add a drop of batter to check, the batter should come on top immediately. Carefully dip the apple slices into the batter.
  9. The batter should coat the slice well. Place the slice in oil and repeat with another slice.
  10. Fry the slices in low flame till they turn golden in colour. Don’t forget to flip them to cook them evenly on both sides.
  11. Dip the fried apple slices in warm sugar syrup.
  12. Transfer these slices into a strainer so that the slices will release excess sugar syrup.
  13. Serve these 'jalebies' with rabri or ice cream or chopped dry fruits.
