Chef Eduardo Perez enjoyed his maiden visit to India tremendously. He first fell head over heels in love with Indian desserts like Gulab Jamun and Rabri, and later excitedly found out that there were lot of similarities between traditional Mexican food and Indian fare. For starters, both have simple cooking techniques, rely heavily on spices, are rustic in nature and therefore are very healthy.
